Our Story

Three generations of passion baked into every loaf

Where It Began

The scent of fresh bread has filled our workshop since 1987, when Hermann Müller first opened the doors to what would become a family legacy. His vision was simple yet profound: create baked goods that honor tradition while embracing the unique character of each ingredient.

What started as a modest neighborhood bakery has grown into a cherished part of the community, yet we've never strayed from those founding principles. Each morning still begins the same way it did decades ago, with careful preparation and unwavering attention to detail.

Methods That Matter

Modern efficiency has its place, but some processes cannot be rushed. Our sourdough starter has been fed and maintained for over thirty years, developing a complexity that gives our bread its distinctive character. This living culture connects every loaf we bake today to those first batches Hermann crafted.

We mix by hand when it makes a difference. We proof naturally, allowing yeast and time to do what machines cannot. Our ovens are calibrated not just by temperature, but by the subtle visual cues that only experienced bakers recognize.

The Team Behind Your Bread

Today, Hermann's daughter Anna leads our team, bringing her own innovations while respecting the foundation her father built. She studied pastry arts in Lyon before returning home, and that international experience enriched our offerings without diluting their authenticity.

Our bakers aren't following recipes printed on laminated cards. They're applying knowledge accumulated through years of practice, making subtle adjustments based on humidity, temperature, and the specific characteristics of each flour batch.

Ingredients We Choose

The wheat in our bread comes from farms less than fifty kilometers away. We know the families who grow it, have walked their fields, and understand their cultivation practices. This relationship ensures consistency and allows us to trace every element of our products.

For specialty items, we source thoughtfully. French butter for our croissants. Vanilla from a cooperative we've worked with for fifteen years. Chocolate from a single-origin supplier who shares our commitment to quality over convenience.

Community Connection

A bakery exists in service to its neighborhood. We've celebrated countless birthdays, weddings, and quiet Sunday mornings through the food we provide. These aren't transactions; they're moments we feel privileged to support.

During difficult times, we've kept our doors open, sometimes when it didn't make financial sense, because people needed that constancy. The trust our community has placed in us isn't something we take lightly.
